Celiac disease is a serious genetic autoimmune disease triggered by gluten. a protein in wheat, rye and other grains. Those with a first-degree relative with Celiac have a 10 to 15% chance of developing it. Some people who don’t have the disease but are sensitive to gluten can experience gastrointestinal symptoms.
